The ham Spain saves for special occasions: nutty, sweet, and melting on the tongue.
Where it comes from
Jamón ibérico comes from the Iberian pig, a dark, slender breed from south-western Spain and Portugal. These pigs store fat inside their muscles, which gives the ham its marbling and its silky texture.
The best pigs roam the dehesa, open oak woodland, and spend their last months eating acorns. That ham is called bellota. Spain uses coloured labels to show what you are buying: black for 100% Iberian, acorn-fed pigs, then red, green and white for other breeds and diets.
The legs are salted, rested and then hung to dry in cool cellars for two to four years, sometimes longer. Some areas, such as Guijuelo, Jabugo, Los Pedroches and Dehesa de Extremadura, hold their own protected names.
How it tastes
Deep red meat with white veins of fat. It tastes of toasted nuts, cured meat and a sweet, almost buttery richness. The fat melts at room temperature, so each slice almost dissolves.
How to buy and serve it
- Check the label colour. Black means the top grade.
- Buy it hand-carved if you can, in slices so thin you can almost see through them.
- Serve it at room temperature, around 22 °C. Cold ham tastes of very little.
- Lay the slices flat on a plate, never stacked.
- Eat opened packs within a day or two, and keep them away from strong smells.
The pairing
The classic is a chilled Fino or Manzanilla sherry. Bone-dry, salty and nutty, it cleans the palate after each rich slice and echoes the ham’s nutty notes. It is how much of Andalusia drinks it.
- White wine: Pazo de Señorans Albariño (about €15.50). Saline and fresh, it cuts the fat.
- Red wine: a Rioja Crianza, soft and gently oaked.
- Close to home: a Luxembourg Crémant, whose bubbles do the same job as sherry.
Also try it with
- Pan con tomate: toasted bread rubbed with tomato and olive oil.
- Marcona almonds and green olives.
- A few slices of melon.
- Nothing at all. The best jamón needs no help.
