Pairing notes

What wine goes with carbonara?

The short answer: a textured Italian white with fresh acidity. Soave Classico, Verdicchio and Frascati are all excellent. If you want red, keep it light and fresh.

Why it works

Carbonara is rich but delicate. There is no cream in the real Roman recipe, just egg yolk, pecorino, black pepper and guanciale, cured pork cheek.

The wine needs enough body to match the silky sauce, and enough acidity to cut the fat. Italian whites like Garganega and Verdicchio have both, plus a gentle bitter-almond finish that loves the salty cheese.

Our bottle

Pieropan Soave Classico (about €14). A family estate since 1880, and the producer that proved Soave can be great. It smells of almond, pear and white flowers, with a clean, refreshing finish.

Other good choices

  • The Roman choice: Frascati Superiore, from the hills outside Rome.
  • A little richer: Verdicchio dei Castelli di Jesi.
  • Red, if you insist: a young, light Cesanese or a chilled Pinot Noir.
  • Bubbles: a dry Franciacorta or Champagne cuts the richness beautifully.

Watch out for

  • Heavily oaked Chardonnay. Too rich on rich.
  • Tannic reds. Egg yolk makes tannin feel chalky.

Serve it right

10–12 °C, cool but not ice-cold. Take it out of the fridge 10 minutes before serving so the texture shows.
