Pairing notes

What wine goes with Thai green curry?

The short answer: an off-dry white with low alcohol. German Riesling Kabinett is the best match. Alsace Gewürztraminer and Pinot Gris are good too.

Why it works

Chilli heat changes how wine tastes. It makes alcohol feel hotter and tannin feel harsher. A big, strong red turns a spicy dish into a fire.

A little sweetness does the opposite: it cools the burn. Low alcohol keeps it gentle. Riesling’s bright acidity also matches the lime, and its aromas sit happily beside lemongrass and coconut.

Our bottle

Schloss Lieser Riesling Kabinett “Juffer” from the Mosel (about €20). Thomas Haag’s family estate makes some of Germany’s most precise Rieslings. This one has a kiss of sweetness, slate-cool freshness and low alcohol: Mosel Kabinett usually sits around 8–9%.

Other good choices

  • Aromatic: an Alsace Gewürztraminer, with lychee and ginger notes.
  • Rounder: Alsace Pinot Gris.
  • Bubbles: an off-dry or demi-sec sparkling wine.
  • Red: only a light, chilled one, like Beaujolais.

Watch out for

  • High-alcohol wines (over 14%). The chilli makes them burn.
  • Very dry, oaky whites. They taste bitter next to spice.
  • Tannic reds. Spice and tannin clash.

Serve it right

Cold: 8–10 °C. Keep the bottle in an ice bucket. A refreshing glass is part of the cure.
