Jambon de Bayonne: what it is and what to pour

South-west France’s answer to Parma: firm, savoury, and salted with spring salt from the Pyrenees.

Where it comes from

Jambon de Bayonne is made in the Adour basin, in the far south-west of France, where Basque country meets Béarn. People have cured ham here for centuries, and it has carried a protected geographical indication (PGI) since 1998.

The pigs are raised in the south-west. The cure uses only salt from the springs of Salies-de-Béarn. After salting, the hams are dried in the warm, dry winds that blow from the Pyrenees, for at least seven months, and usually much longer. Some are rubbed with Espelette pepper. Genuine hams carry the Lauburu, the Basque cross, branded on the rind.

How it tastes

Firmer and saltier than Parma, with a savoury, slightly nutty flavour and a clean finish. A long-aged ham is deeper and more complex.

How to buy and serve it

  • Look for the Lauburu brand and the PGI logo.
  • Ask for 12 months of ageing or more if you can.
  • Slice it thin, but not as fine as Parma. A little more bite suits it.
  • Serve it at room temperature and keep leftovers wrapped in paper in the fridge.

The pairing

Stay local with a Basque red such as Irouléguy, or a dry Jurançon white. Both come from the same corner of France, with the freshness and character to match the ham’s salt.

  • Rosé: Château Miraval Côtes de Provence (about €19). Dry and fruity, easy beside a summer plate.
  • Light red: a chilled Beaujolais.
  • Close to home: a dry Moselle Riesling.

Also try it with

  • Piperade, the Basque stew of peppers and tomatoes.
  • Fried eggs and crusty bread.
  • Ossau-Iraty, the local sheep’s cheese.
  • Black cherry jam from Itxassou.
