Spain’s best-known cheese: sheep’s milk, a zigzag rind, and a nutty, buttery bite.
Where it comes from
Manchego comes from La Mancha, the high, dry plateau of central Spain, the land of Don Quixote. It is made only from the milk of the local Manchega sheep, which graze on the dry plains.
The curd is pressed into moulds that leave a zigzag pattern on the rind, a memory of the woven grass baskets once used. Manchego is aged for at least a month, and often far longer: from a few months for a mild cheese to a year or more for the strongest. It has been protected in Spain since 1984.
How it tastes
- Semicurado (young, a few months): mild, buttery and slightly tangy.
- Curado (around six months): firmer, nuttier, with a little caramel.
- Viejo (a year or more): hard, crumbly and intense, with a peppery finish.
The sheep’s milk gives all of them a rich, slightly sweet taste.
Because it is made from sheep’s milk, Manchego is richer and creamier than most cow’s milk cheeses of the same age. It keeps well, travels well and is easy to love, which is why it is on almost every tapas table in Spain.
How to buy and serve it
- Look for the official Manchego label and the age on the wedge.
- Cut it into thin triangles, the Spanish way.
- Serve at room temperature.
- The rind is usually not eaten.
The pairing
The Spanish answers: a dry Fino sherry or a Rioja. Fino is bone-dry, salty and nutty, perfect with young Manchego as a tapa. A Rioja Crianza or Reserva has the oak and red fruit to match an aged one.
- From our list: Niepoort 10 Years Old Tawny Port (about €35.95) with an old Manchego and a few almonds.
- A juicy red: Desvignes Morgon “La Voûte Saint-Vincent” (about €19), for young and medium cheeses.
- Close to home: a dry Luxembourg Pinot Gris.
- Classic snack: with membrillo, the sweet Spanish quince paste.
Also try it with
- Membrillo, quince paste.
- Marcona almonds and green olives.
- Jamón serrano or ibérico.
- Drizzled with good olive oil.
